Ingredients

  • 36 salted roasted almonds, divided
  • 2 teaspoons finely grated orange peel, divided
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 3/4 cup bittersweet chocolate chips

Recipe Preparation

  • Toss 24 almonds, 1 teaspoon orange peel, honey, and spices in small bowl.

  • Cut slit in each date and remove pit. Press 2 spice-coated almonds into each slit and enclose nuts in date.

  • Line small baking sheet with foil. Melt chocolate in small microwave-safe bowl until melted, about 20 seconds, stopping once to stir. Grasp end of 1 stuffed date and dip 3/4 into melted chocolate. Shake off excess chocolate. Place date on foil. Repeat with remaining dates. Sprinkle remaining orange peel over chocolate-dipped dates. Dip 1 plain almond halfway into chocolate; place atop 1 date. Repeat with remaining almonds and dates. Chill until chocolate sets, 30 minutes.

Peanut Butter Filled Chocolate Dipped Strawberries

Almost everyone has enjoyed chocolate covered strawberries, BUT have you had peanut butter filled, chocolate dipped strawberries?

I first had these at little berries at a tea room in Plains, Georgia. We were at one of Magnolia and Ivy’s tea rooms having an Alice In Wonderland tea party and along with all the other delectable goodies, these strawberries were the hit of the dessert tray.

I’ve done chocolate covered strawberries for years. I have also filled them with a lemon curd filling (stand them up on their bottoms, no chocolate) and also filled them with a chocolate mousse and dipped the edges in coconut. All these are delicious, but the peanut butter filled ones are my favorite.

Try these for your next party, shower, lady’s luncheon or just because. I know you will enjoy them. You may want to let your guests know that they have peanut butter inside just in case anyone is allergic to peanut butter.

Pretty simple ingredients — peanut butter, chocolate and strawberries. My strawberries weren’t the freshest but I had them on hand and thought of this recipe and I’m sure they are going to still taste delicious.


Line a large baking sheet or pan with aluminum foil or parchment paper. Set aside.

In a heavy-bottomed skillet, combine the peanuts, sugar, and water. Cook over medium heat, stirring constantly until the mixture thickens into a syrup.

Continue cooking and stirring for about 10 minutes, or until the liquids evaporate and a sandy-textured sugar mixture coats the peanuts.

Lower the heat a bit and continue stirring as the excess sugar in the pan begins to melt. This will take several minutes. Once the syrup begins to form, it will change in color from clear to golden to amber. Stir constantly and be careful that the heat is not so high as to burn or darken the syrup too much.

When the syrup is a light to medium amber color, and the sugary coating on the peanuts has glazed, remove the skillet from the heat.

Sprinkle the salt and orange flower water (if using) over the peanuts and stir.

Turn the peanuts out onto your prepared pan and quickly spread them into a single layer. Allow them to cool and harden before serving.

Be sure the caramelized peanuts have cooled completely before storing them in an airtight container. Enjoy.

  • Make a double or triple batch, as these peanuts will go fast.
  • They are also perfect for holiday gift-giving. Just put them in a Mason jar or gift bag and tie them with a ribbon.
  • Jazz them up with different kinds of salt, add spices such as cayenne pepper for some heat, or add cinnamon for some sweetness. Or for the holidays, sprinkle them with gingerbread spice.

Today is the second time I made these cookies and they came out as perfect and as delicious as the first time. They are a real hit and easy to make. I get about 6 dozen cookies using a 1.25 inch cookie scoop bake up to a perfect size. I also opt for semi-sweet chocolate chips which complement the dried cranberries really well.

This recipe is perfect. Made these cookies for the first time at Thanksgiving. They were a huge hit. Made them again at Christmas and gave as gifts. Everyone wants the recipe.

The first time I did the recipe to the T and the cookies were on the flat side, buttery, and super sweet. A good cookie! However, I made a couple changes the second time for a more mounded, chewy, and balanced cookie. (1) I replaced the 1/2c granulated sugar for a 1/2c fine-ground oats (better to do them yourself in a food processor than buy oat flour) - cream it with the butter (2) I did two whole eggs instead of the whole + yolk (3) I sprinkled a little kosher salt on the cookies right out of the oven.

These changes upgraded the recipe to delectable, in my opinion. Both versions were best closer to the 14 minute mark.
