Preheat your oven to 400 degrees. Next, line a sheet pan with a layer of tin foil and drizzle lightly with canola oil.

Quickly wash the wings, pat them dry, and arrange on a large plate in 1 layer. Season with Cajun spices on both sides (be careful not to be too generous with the seasoning as there is a good amount of salt in there). Add 2 cups of flour and a 1/4 cup of Cajun seasoning to a large Ziploc bag, then shake to make sure the 2 ingredients are full integrated. Drop 3 or 4 wings in the bag with the flour mixture, and shake to coat with a thin layer, shake off any excess flour, and then add to the prepared sheet pan. Repeat until all of the wings are coated in the flour mixture.

Bake the wings in the oven for approximately 40 minutes, turning over halfway. While the wings are cooking, prepare the sauce by heating the hot sauce, butter, and honey in a small sauce pan. Once the sauce is ready, transfer to a medium-sized mixing bowl and set aside.

When the wings are done, remove the sheet pan from the oven, and using tongs, individually dunk the wings into the sauce to coat with a generous layer then return to the baking sheet. Once all of the wings are coated in the sauce, broil on high for about 2 minutes, being very mindful not to burn the wings. Remove from the oven and coat the wings in another layer of sauce to serve.

  • For the Rub:
  • 1 tablespoons baking powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cumin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 3 pounds chicken wings, cut into drumettes and flats
  • For the Sauce
  • 1/4 cup butter
  • 1/4 cup Louisiana-style hot sauce
  • 1 tablespoon Worcestershire sauce
  • Type of fire:two-zone indirect
  • Grill heat:medium-high

In a small bowl, mix together baking powder, paprika, garlic powder, onion powder, thyme, oregano, cumin, salt, pepper, and cayenne.

Pat chicken wings dry with paper towels. Place wings in a large bowl and sprinkle seasoning mixture, tossing to evenly coat. Arrange wings in a single layer on wire rack set inside a baking sheet lined with aluminum foil, leaving a little space between each wing. Place baking sheet with wings in refrigerator for 8 hours to overnight.

When ready to grill, melt butter in a small saucepan over medium heat. Stir in hot sauce and Worcestershire sauce. Set aside.

Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place the wings skin side up over the cool side of the grill, cover, and cook until skins are crisp and and browned, about 45 minutes.

Transfer wings to a large bowl. Add in sauce and toss to thoroughly coat wings. Transfer to a platter and serve immediately.

Preheat oven to 450°F. Place wings in large resealable plastic bag. Sprinkle Creole Seasoning over wings. Seal bag and shake to coat evenly.

Arrange wings in single layer on foil-lined 15x10x1-inch baking pan sprayed with no stick cooking spray.

Bake 35 to 45 minutes or until wings are cooked through and skin is crisp, turning halfway through cooking.

Mix hot sauce and melted butter in large bowl. Add hot wings toss to coat well. Serve wings with blue cheese or ranch dressing and celery sticks, if desired.

How to Make Hot & Spicy Cajun Wings

Rinse chicken wings and fold them around the drummettes to form a triangle as pictured. Sprinkle half of Mr. Pete's Cajun Seasoning onto the wings. Rub seasoning into chicken. Using the remaining Mr. Pete's Cajun Seasoning, repeat seasoning and rub into meat.

I never measure when seasoning, only because most of the seasoning falls off the chicken during sprinkling and sometimes in the fryer. That's why I like to apply a bit more to this dish. If you like your wings spicy like I do, make sure to use 6 tablespoons of Mr. Pete's Cajun Seasoning. If you cannot handle as much heat, use only 4 tablespoons. This recipe can be adapted to suit your personal tastes.

Fry seasoned chicken in oil at 350 degrees approximately 6-8 minutes. Depending upon the size of your wings, cooking times will vary.

Making the Sauce:
Melt butter in a skillet. Add garlic and hot sauce to pan. Stir until well blended and heated thoroughly and garlic becomes tender about 7 minutes.

Note: Many believe that "Hot sauce is Hot sauce." I, on the other hand, do not. I think that each brand offers different flavors. For this recipe, I like to use Louisiana Hot Sauce, as it is mild and offers a bit of sweetness in the flavor. You may use any brand of hot sauce for this dish. Just note that it may alter the flavor of your wings.

Recipe: Eddie Jackson's Cajun Sticky Wings

Former NFL cornerback Eddie Jackson, now a chef and MVP on the Food Network, offers a Super Bowl-worthy recipe from his cookbook, "Game-Day Eats: 100 Recipes for Homegating Like a Pro" (Harper Design).

CBS News

Eddie Jackson's Cajun Sticky Wings

Prep time:
25 minutes (plus 30 minutes to 24 hours marinating time)
Cook time:
30 to 45 minutes
4 to 6

Cajun Sticky Wings:

2 pounds chicken wings
3 Tablespoons Texas Heat Rub (see below)
3 Tablespoons cornstarch
1 cup Thai sweet chili sauce
1/3 cup Louisiana hot sauce
4 Tablespoons unsalted butter
About 6 cups (1.4 liters) canola oil, for deep-frying
1 scallion, green parts only, thinly sliced, for serving

Texas Heat Rub:

2 Tablespoons smoked paprika
1 Tablespoon kosher salt
2 teaspoons granulated sugar
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons cayenne pepper
2 teaspoons Italian seasoning
1 teaspoon freshly ground white pepper
1 teaspoon freshly ground black pepper
1 teaspoon freshly grated lemon zest

1. Make the Texas Heat Rub. Use a fork to combine all of the ingredients. This rub can keep up to 6 months in an airtight glass container (such as a mason jar).

2. Prepare the wings. Rinse the chicken wings under cold water then pat dry with paper towels. Make sure the wings are completely dry, then break the wings down.

3. In a large bowl, combine the wings with 2 tablespoons of the rub and the cornstarch and toss until the wings are fully coated. Refrigerate, covered, at least 30 minutes, and up to overnight before frying.

4. In a medium saucepan, combine the sweet chili sauce, hot sauce, butter, and the remaining 1 tablespoon of rub and bring everything to a simmer over medium heat, just until the butter melts. Whisk to combine the butter into the sauce. Transfer the sauce to a large bowl and set aside.

5. Set a wire rack in a sheet pan. Pour 6 inches of oil into an 8-quart Dutch oven and bring the oil to 325 degrees Fahrenheit over medium heat. Working in batches, carefully slide the wings into the hot oil and fry until lightly cooked, about 5 minutes. Transfer the cooked wings to the wire rack. While frying keep an eye on the oil temperature and adjust the heat accordingly to keep the oil at 325 degree Fahrenheit.

6. Once all the wings have been through the first fry, increase the heat to bring the oil temperature to 376 degrees Fahrenheit. Working in batches, carefully slide the wings back into the oil and cook until the wings turn golden brown, 5 to 6 minutes. Transfer the twice-fried wings to the bowl with the reserved sauce and toss to coat. Set the coated wings on a wire rack. You can keep the wings warm by placing the wire rack in a 170 degree Fahrenheit oven (or your lowest oven setting) for up to an hour-and-a-half.

7. Sprinkle the scallions over the wings and serve hot.

Preheat the oven to 425 F.

Line a large rimmed baking sheet with foil spray with nonstick spray. Or, use a nonstick foil to line the pan.

Put the chicken wings in a bowl if serving right away, or put in a slow cooker to keep warm if serving as a party snack. Add the sauce, toss to coat, and serve hot immediately or keep warm in the slow cooker.

Nashville Hot Chicken Wings Recipe

Nashville! God bless you good people! Whoever developed this idea, whew! Greatness. I love spice. And this chicken has it all! There was a lot of love put into my version of this recipe. I wanted the chicken to be crunchy, moist, and spicy without being overwhelming. When food is too hot, it can sometimes take away from the other flavor components. But, in my recipe, you can taste every spice equally!

Bring on the HEAT!

It’s very important to seasoning your chicken wings really well before pouring in the buttermilk. I don’t know if it even matters, but I like to ensure that the chicken is coated in spices first. In my head, the buttermilk will act as a binding agent and glue those seasonings to the bird. Sounds legit, right?

Batter Up!

To avoid overly salting our wings, I only add a little bit of celery salt to the flour. I’m using self-rising flour, because it contains just enough baking powder to make our wings extra crispy and crunchy! Be sure to press the flour into the chicken gently while dredging. We don’t want that batter slipping off in the oil.

Using a cooling rack to drain the excess oil off the chicken is essential in preserving the crispiness of the chicken wings. It allows air to circulate around the entire wing. And it makes the next step of brushing on the sauce easier.

Just Right…

Guys, I worked super hard on the measurements and ingredients for the spice blend of the sauce. Again, I didn’t want the heat overpowering the rest of the flavors. But, we are making Nashville HOT chicken wings! It has to have to some heat. And my blend definitely packs it on!

This is my favorite part! I love mixing the hot oil we used to fry the chicken into the spices! This is where all of the magic happens! If oil doesn’t completely soak of the spices. It makes them spreadable per say. Therefore, you can slightly feel the grains of the spice on your fingers when you grab a wing. It’s fiery goodness!

You can spoon on the sauce or toss the wings in it. I chose to brush the sauce on. I didn’t want to disturb that crunchy texture of the chicken. Fearing that if I tossed it, some of the crispy bits would fall off. And we only want those morsels fall into our mouths!

So that’s how we make our BEST buffalo wings in the oven.

  • We make the hot wings sauce,
  • Dry the wings thoroughly,
  • Bake the wings dredged in baking powder and dry seasoning,
  • And dunk the wings in the sauce.

Here are a few things that also make a big difference…

Tip 1: The drying is so important I’m going to mention it again. The wings must be super dry in order to get crispy. Use paper towels to squeeze each wing so the skin is moisture-free.

Tip 2: The cayenne pepper sauce you use for the wing sauce needs to be good! I like Frank’s RedHot Original, but you can use your favorite brand.

Tip 3: You can place the chicken wings directly on a baking sheet, but it’s best if you set them on a baking rack over a baking sheet. That way, the hot air can circulate all the way around them in the oven.
