Father’s Day is the one time of year we really stop to appreciate dear old dad. While today we like to give dad great gifts that make him smile and barbecue a great meal for him, dad wasn’t always appreciative of this. Many fathers didn’t believe in celebrating Father’s Day back in the day, as they felt that it wasn’t a “manly” gesture to shower fathers with presents “likely” bought with his own money, and felt that Father’s Day was another commercializing holiday scam used to push products. It took President Nixon re-election campaign to get an official proclamation signed in 1972 to recognize this day as a federal holiday.

And much like Mother’s Day, this national holiday changes dates each year. So you definitely don’t miss this important paternal holiday, we found out when Father’s Day was happening for the next few years to come.

Father's Day 2018

Father's Day is a celebration of fathers started in the United States in the early twentieth century. It can be seen as a complement to Mother's Day but the holiday is not as popular as Mother's Day. Partly because it is much younger -- it became official in 1972 while the latter in 1914.

Traditionally the father was the breadwinner while the mother was a housewife and raised the children. But that traditional family model is now less common. Nowadays often both parents work and share responsibilities associated with raising children and taking care of the house. Scientific studies confirm that fathers have a role to play in child development and affect the course of their children's development, for good as well as for ill [1]. Studies have consistently shown that paternal warmth, nurturance and closeness are associated with positive child outcomes even if fathers spend less time with their children than the mothers.

Father's Day is a great opportunity to appreciate the love and effort of our fathers. Fortunately, in recent years, it is getting more media attention, schools organize activities related to Father's Day and retailers promote buying fathers special greeting cards and male-oriented gifts such as electronics and tools.

Expenses related to the celebration of Father's Day are still much smaller than those associated with the Mother's Day. Obviously, this is due to the smaller popularity of the former and lesser degree of commercialization. It should also be taken into account that some children are brought up without a father. Perhaps it is also harder to buy a good gift for Dad because often anything he wants he has already bought, or it is too expensive to buy for a Fathers Day gift.

It is worth remembering that sometimes the best possible gift would simply be recognition and thanks for all the effort put into being a good Dad who cares about his family. Men need to feel respected and appreciated but often do not know how to ask for it. For some fathers the best gift would be to let them spend Father's Day alone and do whatever they want to, while the ideal deal for others would be to spend more time with their loved ones, especially children.

Father’s day history:

The idea of Father’s Day — a special day in honour of fathers and a celebration of fatherhood was introduced first in the United States. A woman named Sonora Smart Dodd got inspiration from the American Mother’s Day celebrations to plan a day to honour fathers.

In the US, the celebration of Father’s Day is over a 100-years-old and it is believed that the occasion is being celebrated since 1910. The celebrations inspired many countries including the United Kingdom and thus began the worldwide custom of Father’s Day which is now celebrated with cards, gifts and memorable day outs.

Father’s Day is considered extremely important as it is a sentiment that helps in strengthening the child-father relationship and also helps in the emotional development of a child. It is a way to acknowledge the contribution of fathers to individual families and to societies at large. The observance of Father’s Day provides children with an opportunity to express love and respect for their fathers.

Celebrate Father's Day with these charming vintage photographs

Then, Catholic Europe marked Father&rsquos Day on St Joseph&rsquos Day in recognition of the figure married to Mary, Jesus&rsquo mother, and became his legal paternal guardian.

Some Catholic or Christian countries, including Spain, continue to adopt this date today in recognition.

Father&rsquos Day was later taken to the Americas by the Spanish and Portuguese, but the tradition did not become prominent in the US outside of religious circles until the 20th century.

Thanks can be given to social activist Anna Jarvis, who successfully campaigned for an annual Mother&rsquos day holiday to be held following the death of her mother in 1905.

Jarvis held a memorial for mother and all mothers at Andrew Methodist Episcopal Church in West Virginia, on May 10, 1908, and her influence saw people across the country adopting the day as an annual celebration enabling Father&rsquos Day to follow suit.

But another theory says Father&rsquos Day was born out of the tragic Monongah mining disaster.

The disaster was the US&rsquos worst mining disaster in history, killing 362 men, 210 of whom were fathers.

One daughter who lost her dad, Grace Golden Clayton, suggested a memorial day for the dead to her local Methodist pastor and the first Father&rsquos Day took place on July 5, 1908.

The event was largely confined to the region but two years later, the daughter of a Civil War veteran raised the idea of an annual celebration after hearing a sermon about Mother&rsquos Day.

Sonora Smart Dodd, from Washington, believed fathers should also be honoured in the same way.

One of six children, Dodd was influenced by her father becoming a single parent of six after her mother died in childbirth.

Attempts to make the day a recognised federal holiday had several false starts.

The date was finally honoured by President Nixon in 1972, shortly before his resignation from office.

In the UK, the date entered into British popular culture sometime after the Second World War.

Mother’s Day is so last month. This weekend it’s all about Dad.

Breakfast in bed was nice for Mom but for the guys … not so much. Especially not these guys.

Meet three local dads whose passion for cooking goes well beyond the grill . or even the standard family dinner. The Winter, Stodola and Orvis families are the well-fed beneficiaries of the resident dad’s enviable kitchen skills.

Parents were foodies

To say that Rick Winter grew up in a food-focused family would be an understatement. Rick’s parents, Bernalee (Bunny) and the late Chuck Winter, were foodies decades before anyone used that term. The “energizer” Bunny was determined to teach her five sons to cook.

“I had all the boys doing hands-on cooking and helping in the kitchen before they left for college,” Bunny Winter recalls. This 88-year-old matriarch of a family of nine grandchildren and eight great-grandchildren takes pride in son Rick’s obsession.

“Everybody loves to eat … all my boys are interested in food, but Rick has taken it to different level,” Bunny explains.

Rick credits both his parents for his love of food.

“My mom would make beautiful food,” he says. “She always made whatever birthday dinner we wanted, and she ended up cooking beef Wellington for me and paella for my brothers.”

Health forced changes

A physical exam six months ago forced Winter, who lives in Fox Point, to change his eating and cooking habits, but with the Instagram name MilwaukeeFoodKing, Winter hasn’t let doctor’s orders hurt his cooking game.

“My passion is Asian food,” he says. “I buy salt-free spices and I try to be healthier.”

Winter’s pad Thai incorporates a variety of Asian spices to enhance the flavor.

“I like the heat,” he says. “I try to get flavor from things like ginger, garlic, basil, cilantro and kefir lime leaves instead of salt.”

Winter’s late father was an influence on both Rick’s vocation, dentistry, and his avocation: cooking. The Winter family boasts four generations of dentists. Rick’s grandfather and father both were Rick and his brother Bruce currently practice Bruce’s son, Jeremy, is a dentist in Chicago, and Rick’s daughter, Ariel, is a dental student at Marquette.

Winter’s wife, Jackie, and kids Ariel and 18-year-old Eli, are Winter’s favorite sous chefs and dining companions.

“My dad would say never skimp on quality food,” Winter says. “If you can raise your kids with healthy eating habits, it’s such a gift. The best Father’s Day gift I can have is to live a long time and play with them.”

A cook since childhood

Like many children with military parents, Craig Stodola remembers his father, Jack, cooking creamed chipped beef on toast (also known as an expletive on a shingle). Easy-to-make and budget-friendly, the dish wasn’t exactly gourmet fare, until young Craig worked his magic.

“The dish is butter, flour, milk, maybe a pinch of salt and pepper and hamburger or chipped beef. It was so bland. I thought, ‘what if we add seasoned salt or garlic powder and make a carmelized rue?’ My dad tasted it and said, ‘Wow, this is pretty good,’ ” Stodola recalls.

Inspired to raise his cooking game, Stodola turned to television years before the Food Network and Cooking Channel filled the airwaves.

“I started watching cooking shows on PBS and I learned about seasoning. I read cookbooks and got ideas then I would ask, ‘What can I do to make this recipe mine?’ ”

Now a father to two sons, 6-year-old Jonas and 4-year-old Keegan, Stodola and his wife, Angie, who live in Oak Creek, balance parenting duties with busy careers: Stodola owns Craig John, a wedding photography service Angie works for Northwestern Mutual. Stodola also writes a food blog,, and is a fan of the “eat local” movement.

“We’re members of the Pinehold Gardens CSA, we also go to their farm stand and load up on onions, carrots, garlic and tomatoes. My kids eat those tomatoes like candy,” Stodola says.

Cast iron devotee

Stodola swears by cast-iron cookware and a smoker.

“I have a vintage cast-iron skillet,” he says. “We threw away all our Teflon, and I learned how to cook on cast iron. And I don’t grill anymore. I love to make hot dogs or brats in the smoker, and when I cook a steak it’s seared in a cast-iron skillet and then shoved in the oven. Nothing gives as good of a crust on a Porterhouse like cast iron.”

Stodola uses cast iron for every breakfast and for his favorite fish tacos. “Teflon is not that great for you, and there are so many benefits with the cast iron. I’ve been loving it.

“Once these beauties are well seasoned, they are slick — a little oil, and they’re as non-stick as the best Teflon.”

Preserving his family memories through food is an ongoing project that’s a labor of love for Stodola.

“Over the past several years, I've been collecting my family’s old recipes,” he says.
“From my mother, grandmother, cousins and siblings … I’m creating a historical archive to pass down to my kids. Hopefully they'll add to it, pass it down to their kids and keep it going.”

Funny man in the kitchen

A former comedy professional, Bob Orvis keeps his family laughing and eating great food. Orvis spent many years performing with and managing the travelling troupe of improv comedians at Comedy Sportz.

Now retired, Orvis is a stay-at-home dad who shares cooking duties with wife, Lisa, for their daughters, 18-year-old Kyra and 15-year-old Chloe. When he was growing up, Orvis’ mom, Betsy, encouraged him to be independent in the kitchen.

“My mom made sure I learned to cook,” he says. “She said, ‘Bobby, someday, men will have to cook.’ My dad worked really hard and he was not a cook.”

Betsy’s prediction came to pass, as Bob does his share of his family’s cooking. “Lisa takes pride in her cooking and she’s an excellent cook we go back and forth,” he explains.

Personal spin is his MO

Orvis adapts existing recipes to fit his own tastes.

“I tell my kids that the person who writes a cookbook is a really good cook. They perfect the dish and then turn it into a recipe, so to not follow that would be dumb.”

At the same time, putting a personal spin on an existing recipe is Bob’s secret to cooking success.

“I have an old Betty Crocker cookbook and I look at that, then I go on the internet,” he says. “I adjust most of the recipes I use.”

He’s been making a family-pleasing roasted pork dish with a sweet spin.

“The first time I added more apples, then I decided to add fresh pineapple. Sometimes, I add ingredients to add color, sometimes I do it to add different smells,” he says.

Gardening is another passion for Orvis, who tends the garden at his Glendale home.

“I grow tarragon, thyme, rosemary, oregano, sage, mint and fennel and chives in a raised box,” he says. “The rest of the garden is based on the ‘dirty list,’ the foods you have to eat organically.

“I make sure I grow the stuff that has to be organic, like beefsteak and Sun Sugar tomatoes. They look like a bright orange golf ball you eat them like candy, and you can’t find them in the store.

“I grow eggplant, bell peppers and yellow beans. Yellow beans are good to grow after you grow tomatoes. Rotate your crops because it keeps the garden nice and fresh.”

As with many dads, the perfect Father’s Day for Orvis would be a simple one.

“I don't really want to be waited on, and I'm not into gifts. But to see the whole family together, having fun, would be perfect.”

Avid-cook dads envision the ideal Father’s Day

What do these foodie fathers have planned for the one day a year that’s devoted to them?

For Rick Winter, it will be a combination of a fun activity and a simple meal.

“The ideal Father’s Day would involve getting together with both kids to hit tennis balls or go for a bike ride and have a picnic lunch. Jackie and I would pack it together we could make a salad and grill chicken breasts.”

Spending time with family and eating chicken are popular Father’s Day choices. Craig Stodola has a similar vision.

“My ideal Father’s Day meal would involve a fried chicken picnic and my potato salad, my family at the Milwaukee zoo, then wandering around to see the animals with the kiddos. And finally, grabbing a cone at the ice cream store in the zoo’s family farm.”

Bob Orvis doesn’t mind manning the grill on Father’s Day.

“If it’s a nice day, I’d grill tuna steak and chicken with a side of fresh grilled vegetables. I marinate the chicken in rosemary and olive oil and cook it on indirect heat. The tuna steak I sear right over the hot grill.”


This healthy pasta dish uses spaghetti squash instead of noodles and eggplant instead of meat. Any spiralized vegetable will work as a base for the sauce and add any additional vegetables like zucchini to the sauce.

Rick recommends using good red wine and adds, “If you wouldn’t sit down to drink it, don’t cook with it!”

Rick Winter’s Pasta Sauce

  • 6 cloves fresh garlic, chopped
  • 1 tablespoon red pepper flakes or 1 to 2 tablespoons cherry bomb hot sauce (available at Outpost Natural Foods) or both — or to taste
  • 1 medium Spanish onion, diced
  • 1 tablespoon olive oil
  • 1 large eggplant, peeled and cubed
  • 1 or 2 yellow squash or zucchini, chopped
  • 1 cup cauliflower (broken into small pieces)
  • 1 small package baby Portobello mushrooms (or any mushroom) (about 1 cup sliced)
  • 1 cup low-sodium chicken or vegetable stock (divided)
  • 2 cans (16 ounces each) salt-free whole tomatoes
  • 1 can (16 ounces) diced, salt-free tomatoes
  • 4 to 6 medium fresh tomatoes, chopped
  • 2 to 4 tablespoons tomato powder or ½ of a 6-ounce can of salt-free tomato paste
  • 3 cups full-bodied red wine
  • 2 bay leaves
  • 4 tablespoons salt-free Italian seasoning
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons Lawry’s salt-free 17 seasoning (or any salt-free seasoning)
  • 2 yellow bell peppers, cut into small squares
  • 2 red bell peppers, cut into small squares
  • Leaves of 1 sprig fresh rosemary, chopped
  • 5 stems fresh basil, cut chiffonade (1 small packet, about 1 cup)
  • Juice of 1 lemon
  • 1 teaspoon sugar
  • 1 large spaghetti squash
  • Grated Parmesan cheese for topping

In a large skillet, sauté minced garlic, chile flakes and onion in the 1 tablespoon olive oil until translucent.

Add eggplant and sauté until tender, about 7 to 8 minutes. Add yellow squash, cauliflower and mushrooms and sauté briefly. Add ½ cup broth and cover allow to steam until veggies are tender.

Place canned tomatoes, fresh tomatoes, tomato powder or paste, wine, remaining ½ cup vegetable broth, the bay leaves, salt-free Italian seasoning, black pepper, the 2 tablespoons olive oil and the Lawry’s seasoning in a 6- to 8-quart pot for making a spaghetti sauce and bring to simmer. Add eggplant, garlic, onion, yellow squash and cauliflower mixture to pot and stir. Add yellow and red bell peppers and rosemary and basil.

Simmer 30 minutes. Add lemon juice and sugar.

While sauce simmers, microwave the whole spaghetti squash a couple of minutes just to make it easier to cut. Then cut in half and put face down in a large Pyrex dish in microwave. Add an inch of water and cover. Microwave until tender, about 15 minutes. (Or, alternatively, cut the squash in half, place face down in a large baking pan with 1 inch of water, cover with foil and bake at 350 degrees about 40 minutes, until tender.) Remove seeds and use a fork to shred the squash into spaghetti-like strands.

Heap a spoonful of the sauce on the spaghetti squash. Top with Parmesan and serve.

Notes: Feel free to add additional vegetables such as kale, spinach, cubed cooked yellow beets, etc. Sauce also can be served over quinoa.

This recipe for an Asian favorite uses liquid coconut aminos instead of soy sauce to minimize sodium and spiralized beets in place of noodles to maximize nutrition. Collecting ingredients for this recipe will require a trip to an Asian grocery store such as Pacific Produce or Phongsavan Market, and you’ll want to block out a healthy amount of time to prepare this dish.

Also, the dish is spicy, so you may want to make it with a smaller amount of chiles the first time. For the photo Winter additionally garnished the dish with some spiralized carrots.

Rick Winter’s Healthy Chicken Pad Thai

  • 4 boneless, skinless chicken breasts, sliced
  • 2 egg whites
  • 4 tablespoons spicy salt-free Thai seasoning (from Spices Inc.)
  • 2 Thai chiles (or jalapeño peppers), finely chopped (divided)
  • Splash of miuchu Chinese cooking wine (found in Asian stores) or sake or any dry white wine
  • 2 tablespoons coconut aminos (available at grocery stores near the soy sauce)
  • 1 tablespoon olive oil
  • 6 cloves garlic, minced
  • 2 inches of peeled and finely chopped fresh ginger (optional)
  • Splash of low-sodium chicken or vegetable broth
  • 1 block yellow tofu, cut into cubes (optional see note)

Vegetables and omelet:

  • 2 cups Chinese broccoli or baby bok choy or both
  • 4 to 5 raw golden beets, spiralized (see note)
  • 1 tablespoon olive oil
  • 6 egg whites
  • Spicy salt-free Thai seasoning to taste
  • 6 tablespoons coconut aminos
  • ½ cup tamarind juice (available at Asian grocery stores)
  • 4 limes, halved (divided)
  • 6 tablespoons white vinegar
  • 4 tablespoons low-sodium Chinese black vinegar (found at Asian stores)
  • 2 tablespoons palm sugar or brown sugar (palm sugar is available at Asian grocery stores)
  • 4 tablespoons spicy salt-free Thai seasoning
  • ½ cup Miuchu cooking wine or sake
  • 1 to 2 Thai chiles, diced
  • 1 tablespoon salt-free ketchup
  • ¾ cup low-sodium chicken or vegetable broth
  • 1 teaspoon paprika (not smoked)
  • 3 to 4 large kefir lime leaves, very finely chopped (available at Asian grocery stores)

For assembly:

  • 5 stems Thai basil, chopped with leaves pulled off
  • 5 stems cilantro, chopped with leaves pulled off
  • 3 cups raw, sliced cabbage
  • 1 cup raw crushed peanuts or cashews or a combination
  • 3 cups bean sprouts
  • 1 small red or yellow bell pepper, cut into strips
  • 1 tablespoon fried garlic (optional available at Asian stores) for garnish

Make chicken/tofu: Marinate sliced chicken in 2 egg whites with Thai seasoning and 1 diced Thai chile (or the whole jalapeño), a splash of Chinese cooking wine (Miuchu) and 2 tablespoons coconut aminos for at least half an hour (or overnight).

Remove chicken from marinade. Add olive oil to wok, then add chicken with the garlic, ginger and 1 additional Thai chile or jalapeño. Sauté until chicken is fully cooked. Remove from wok.

Pour a splash of chicken or vegetable broth into wok, add tofu and sauté. Cover and allow tofu to steam 2 minutes. Remove tofu and set aside.

Prepare vegetables/omelet: Bring a pot of water to boil and blanch the Chinese broccoli or bok choy until tender, about 1 to 2 minutes. Remove with a strainer. Plunge into ice bath to maximize the green color and stop the cooking.

Plunge beet strands into boiling water 10 seconds just to soften slightly, then remove and rinse.

Add 1 tablespoon olive oil to wok and heat over high heat. Add egg whites and let cook when brown on the edges, flip it over, cook on other side, then remove and cut into strands. Sprinkle with Thai seasonings.

Make sauce: In a bowl, mix the 6 tablespoons coconut aminos, the tamarind juice, juice of 2 limes, both vinegars, the palm or brown sugar, 4 tablespoons Thai seasoning, and the Miuchu wine or sake. Add Thai chiles. Stir and taste. Add ketchup, chicken or vegetable broth, paprika and kefir lime leaves.

Assemble the dish: Return chicken to wok. Add bok choy, tofu, Thai basil, cilantro, egg strips, raw cabbage, raw nuts and sauce mixture. Squeeze fresh lime juice on top from remaining 2 limes. Remove from heat. Add bean sprouts and bell pepper, stir everything together, top with fried garlic, if using, and serve.

Notes: Yellow tofu, with a nice meaty texture, is available at Asian grocery stores. You can also use fried tofu. Otherwise, omit the tofu. The tofu in this dish needs to hold its form, and even firm tofu won’t work.

In place of spiralized beets, any spiralized vegetables can be used. Or substitute edamame pasta or “shirataki” Miracle pasta.

Craig Stodola believes in using the highest quality ingredients. He gets fish delivered right to his door from Sitka Salmon Shares, a fish CSA. Stodola’s produce comes from the nearby Pinehold Gardens CSA.

Craig Stodola’s Springtime Crispy Fish Tacos with Ramps and Chipotle Sauce

Mexican crema:

  • 2 cups heavy whipping cream
  • 2 to 3 tablespoons buttermilk
  • Juice of ½ lime
  • Sea salt to taste

Chipotle sauce:

  • 3 to 4 large ripe heirloom tomatoes, roughly chopped
  • 1 chipotle en adobo sauce, roughly chopped
  • 1 tablespoon adobo sauce
  • 2 cloves garlic, roughly chopped
  • 2 teaspoons ground cumin, preferably freshly ground in a spice grinder or with a mortar and pestle
  • 1 tablespoon dried Mexican oregano
  • Sea salt to taste
  • 3 tablespoons olive oil
  • 1 cup chicken or vegetable stock
  • 8 corn tortillas (see note)
  • 1 handful of ramps (about 5 or 6), cleaned with roots trimmed off
  • ¾ cup finely ground cornmeal
  • ½ cup all-purpose flour
  • 3 tablespoons Southwest seasoning (any brand)
  • Pinch of salt
  • 1 pound yelloweye Rockfish, cut into thin strips (or any firm white fish such as halibut, Pacific cod, flounder)
  • Vegetable oil for frying fish
  • 1 avocado, cut into thin slices
  • Queso fresco crumbled cheese
  • Salt to taste

You’ll need to start this recipe a day ahead.

Prepare Mexican crema: Combine whipping cream and buttermilk in a container. Stir thoroughly, cover and leave out on the counter overnight, or at least 10 to 12 hours, to allow mixture to thicken. Add lime juice and salt, stir thoroughly, cover and refrigerate 1 to 2 hours before use, to allow mixture to thicken.

Make chipotle sauce: Put all ingredients except stock and olive oil in a food processor and blitz until smooth.

When Mexican crema is ready, make the creamy chipotle sauce that you’ll be serving with the tacos. Heat a saucepan over medium heat. Add olive oil and, when it’s hot enough to make the chipotle sauce sizzle, pour in ½ cup of the chipotle sauce and fry 5 minutes, until it starts to reduce. It should sizzle and bubble vigorously this concentrates the flavor and adds complexity. After about 5 minutes, add stock and cook vigorously to reduce by about half.

Remove from heat, set aside and let cool to room temperature, then add half the Mexican crema and stir. Place in an airtight container and refrigerate about an hour before serving. (Remaining chipotle sauce, after removing the ½ cup to fry, can be saved for another use: to simmer meatballs, pork chops or chicken, for example. Remaining Mexican crema can be used like sour cream.)

Prepare tacos: Set a dry griddle over medium or medium-high heat. When it’s hot, heat corn tortillas one at a time until warm and soft, a few minutes on each side. Place tortillas on a plate and cover with a clean dry cloth to keep warm.

Mince the ramps from bulbs to tips of the greens and separate minced bulbs from minced leaves. Sauté the bulbs in olive over medium heat about 3 minutes.

In a large bowl, mix cornmeal, flour, Southwest seasoning and a pinch of salt.

Wash fish strips and shake dry fish will still be damp. Add fish strips to cornmeal mixture to coat liberally.

Heat oil to a depth of about ½ inch in a cast-iron skillet until bubbly. Working in batches, add coated fish and cook until golden brown, flipping when each side gets golden brown, about a minute or two on each side. When fish is golden brown and crispy, remove from oil. Place on rack or paper towels to drain and season with a pinch of salt.

Double up the tortillas to make 4 total tacos. Place some fish (about 2 to 3 strips, depending on size) in middle of each tortilla pair, add sautéed ramp bulbs and a generous little mound of the minced ramp greens, top with a slice of avocado, then drizzle with the creamy chipotle sauce and top with fresh crumbled queso fresco. Serve immediately.

Note: Stodola uses El Milagro Blancas (white corn) tortillas, available at Woodman’s and online. The tester used 8-inch corn tortillas.

Bob Orvis recently prepared this hearty pork dish, with sides of glazed carrots and braised red cabbage, for his family of four.

Roast Pork Tenderloin

  • 2 pounds pork tenderloin
  • 4 tablespoons extra-virgin olive oil (divided)
  • 1 4-inch and 1 6-inch sprig fresh rosemary (divided)
  • 3 garlic cloves, minced
  • 2 tablespoons grapeseed oil
  • ½ teaspoon ground thyme
  • Salt and pepper to taste

Marinate tenderloin in 2 tablespoons olive oil and the smaller sprig of rosemary (broken into pieces), cutting slits in meat to allow access, for about 5 hours.

Preheat oven to 400 degrees.

Mix garlic, needles from the remaining sprig of rosemary, remaining 2 tablespoons olive oil, the grapeseed oil, thyme and salt and pepper. Roll meat in mixture.

Place in a pan and bake in preheated oven 45 minutes or until internal temperature reaches 145 degrees. (Check first after 35 minutes.) Remove from oven and let sit 10 minutes before slicing and serving.

Braised Red Cabbage

  • 3 slices uncured bacon
  • 2 tablespoons olive oil or grapeseed oil
  • 1 medium onion, sliced and then slices quartered
  • 2 Fuji apples (or another type), sliced
  • 2 cloves garlic, minced
  • 1 small red cabbage, shredded
  • 1 cup cut-up fresh pineapple
  • 1 cup chicken broth
  • ½ cup unfiltered apple cider vinegar
  • ½ teaspoon Himalayan pink salt
  • Black pepper to taste (optional)

Cook bacon in a Dutch oven until browned and fat is rendered out. Remove bacon, add oil and cook onion, apples and garlic 6 to 8 minutes, until onions are soft. Stir in cabbage, pineapple and bacon cut into 1-inch pieces. Add chicken broth, vinegar and salt and bring to a boil. Reduce heat, cover and simmer about 25 minutes, until cabbage is tender.

Honey Glazed Mint Carrots

  • 1 package (8 ounces) baby carrots
  • ½ to 1 cup water (depends on size of pan)
  • 2 tablespoons honey
  • 3 tablespoons butter
  • Finely chopped fresh mint to taste

Place carrots in a saucepan and cover with water and the honey to about ½ inch over the top.

Partially cover and boil carrots over medium heat until most of the water is gone, 6 to 8 minutes. Add butter, cover and cook another 6 minutes or so until you have a nice glaze. Sprinkle on fresh mint.
