Raw forest fruit cake

I love raw cakes because they are very spicy and filling, you ate a slice and you don't need anything anymore. I even eat a portion instead of the table, to take care of the silhouette :) Today I prepared with the help of my dear friends from Solaris a raw cake with berries. It turned out to be a delight! :)

  • 300g hydrated raw cashew 2 hours
  • 300g frozen berries
  • 4 lg maple syrup (according to taste, depending on preferences)
  • 50g cocoa butter

For the countertop we introduce the ingredients in the food processor and mix well, until we obtain a sticky composition, which we press on the bottom of a ring cake form (we used one with a diameter of 18cm).

For the cream we put in the high power blender (or food processor) drained cashews and pancakes, maple syrup and berries. Mix well, and when we are satisfied with the fineness of the cream, we add the melted cocoa butter to the bain-marie and mix a little more.

Pour the cream over the counter and put the cake in the freezer until it hardens enough. We decorate it to our liking, I used fresh berries :) Great appetite!

I love raw cakes because they are so delicious and filling, after a thin slice you don't need anything else. I usually replace a meal with a slice, that way I am careful about my weight :) Today I prepared a raw forest fruit cake. It turned out amazing! :)

  • 300 g raw cashews soaked for 2 hours
  • 300 g frozen forest fruit
  • 4 tbsp maple syrup (to taste, according to your preferences)
  • 50 g cocoa butter

For the crust put all the ingredients in the food processor and process well, until you get a sticky, crumbly mixture. Press it onto the bottom of a spring-form pan (18 cm diameter)

For the filling process in the high speed blender (or food processor) the drained cashews, berries and maple syrup. When smooth enough, add the melted cocoa butter and process a few more seconds. Pour the filling over the crust and place in the freezer until hard enough to slice. Decorate as you like, I used fresh berries :) Enjoy!

Meringue cake with berries - recipe

Ingredients for meringue leaf

Cream ingredients:

  • 250 g fresh or frozen berries
  • A box of mascarpone cream - 250 g
  • 125 ml creamy liquid cream (cold)
  • 2 tablespoons sugar
  • A little lemon juice

How to prepare meringue sheet:

In a clean bowl, beat the egg whites with a pinch of salt. Along the way, add the sugar, little by little. The foam must be consistent, hard and shiny. Spread on an oven tray lined with baking sheet. Place in the oven at 180 degrees at the beginning (5, 6 minutes) and then the temperature is reduced to 160 degrees C (another about 15, 20) minutes. The bezel must coagulate. to be slightly reddish. It is then left to cool. When it is cold you can break it or cut it to fill it with cream.

Cake with berries!

This quick cake leaves no one indifferent! It is very fine, moist, juicy and simply melts in your mouth! You can prepare it with any sour fruit. Be sure to try it!


-200 g of fermented cream

-a saffron powder (optional)

1. Break the eggs into a deep bowl. Add caster sugar, vanilla sugar, salt and a saffron powder (gives the cake a more intense color). Mix with the mixer until smooth.

2.Add the fermented cream and melted and cooled butter. Beat the composition with the mixer.

3.Add the sifted flour and baking powder. Mix very well until you get a homogeneous dough, without lumps.

4. Wallpaper the bottom of a round tray, 22-24 cm in diameter (preferably higher), with baking paper. Transfer half of the dough obtained in it and spread it evenly.

5. Sprinkle berries (fresh or thawed) on the surface of the dough.

6. Cover them with the remaining dough, spreading it evenly.

7. Bake the cake for 60 minutes in the preheated oven to 160 ° C or for 45 minutes in the preheated oven to 180 ° C. Check that it is ready by the toothpick test.
