  • 170g (6oz) self raising flour
  • 170g (6oz) butter
  • 170g (6oz) soft brown sugar
  • 60g (2oz) dark brown sugar
  • 3 eggs (beaten)
  • 3 over ripe bananas
  • 1 tsp vanilla essence

  1. Grease a small cake tin with butter (I add a tbsp of cocoa to line it too.) Preheat oven to 180 C / Gas 4.
  2. Beat the butter and sugar together in a bowl.
  3. Add the vanilla essence to the beaten eggs and add to the creamed sugar bit by bit until mixed well.
  4. Stir the flour in bit by bit to the mixture.
  5. Mash the bananas with a fork until gooey and add to the cake mixture.
  6. Pour into the greased tin (I always have extra so I make muffins with the leftover batter). Bake in the oven on a middle shelf for 35-45 mins until skewer comes out clean. Leave to cool on a baking tray.
  7. Once cooled, turn upside down to remove from tin and sift icing sugar over the top of cake.
  8. Slice and serve, delicious served with peppermint tea!

This banana bread is very nice but very sweet I have made a second loaf with half the sugar and it was much nicer, I thought with the bananas and the sugar being the same amount as the flour it was too sweet, but overall a great recipe and my family loved it.-13 Jul 2011

Recipe Summary

  • 1 cup whole wheat flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ⅛ teaspoon salt
  • cup 0.25
  • 2 tablespoons margarine, melted
  • 4 medium-sized very ripe bananas, peeled and mashed
  • 1 large egg, lightly beaten
  • Cooking spray

Lightly spoon flours into dry measuring cups level with a knife. Combine flours and next 3 ingredients in a large bowl. Combine sweetener and next 3 ingredients add to flour mixture, stirring just until moist.

Pour batter into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350° for 50 to 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes remove from pan, and cool completely on wire rack.


These rolls follow an easy recipe involving flour, water, milk, sugar, salt, oil, butter and yeast. Once the ingredients are mixed and in the oven it will be about 30 minutes before you have fresh, warm rolls at your fingertips!

Banana bread tops list on most searched for recipes during coronavirus lockdown

Banana bread has become the most searched for recipe during the coronavirus lockdown, as more hopeful bakers look to practice their cooking skills.

Since Boris Johnson announced the country would be going into lockdown on 23 March, BBC Good Food noted banana bread was the most searched for recipe.

Perhaps unsurprisingly, 13 out of the top 20 recipes fell into the cakes, biscuits or desserts category.

In other words, sweet treats are our go to lockdown comfort food.

Of the seven recipes that didn’t include the likes of brownies, cakes and cheesecakes, people were searching for everyday comfort food.

The recipes included easy to make bread, Yorkshire puddings, Chilli Con Carne and cheese scones.

The top ten, though, were all baking or bread related.

With bread making proving to be a popular pastime among British people in lockdown, the site had more than three million views on bread-related recipes in the first two weeks of lockdown.

As many people have tried their hand at making sourdough bread - in lieu of being able to go to a local cafe and enjoy avocado on sourdough - it’s not all that surprising that sourdough recipes were up 900% on last year.

But, what’s causing so many people to pick up a whisk and give baking a go? According to BBC Good Food’s Lily Barclay, it’s all about the calm factor.

“Baking is such a calming activity which can help you focus and take away the stresses of the day, so it's no wonder we're seeing activity on the website post 10pm as people use baking as a coping mechanism.

“The motion of stirring, beating, and kneading can be meditative and the results are very rewarding, which is why we are seeing a surge in people wanting to learn new baking skills.”

If there’s one positive thing we can hope to take out of the coronavirus pandemic, it’s a solid banana loaf recipe.


  • Ripening bananas in the oven – Place the unpeeled bananas spaced apart on a baking sheet lined with foil or parchment paper and bake at 350 degrees F for 15 – 20 minutes until black or dark brown on the outside and soft to the touch. Allow them to cool before using.
  • Ripening bananas in the microwave – Using a fork, poke straight through the banana peel multiple times on all sides to allow the heat to easily penetrate then microwave for 30 seconds at a time, checking each time for doneness. This can take up to a couple of minutes depending on how green the bananas were to begin with. The bananas are done when they have the soft texture of a ripe banana. Cool before using.
  • Ripening bananas in a paper bag – Place the bananas in a loosely closed paper bag to help trap the ethylene gas (that is responsible for ripening) to help speed up the process. Check the bag once a day and remove the bananas when they have reached your desired ripeness.

These methods aren’t just useful for this recipe, they’re also useful for all the other ripe banana recipes that you’ll try.



100g (4oz) butter, softened
175g (6oz) caster sugar
2 eggs
2 ripe bananas, mashed
225g (8oz) self-raising flour
1 tsp baking powder
2 tbsp milk

You will need a 900g (2lb) loaf tin, 17 x 9 x 9cm (6½ x 3½ x 3½in) base measurement.

Lightly grease the loaf tin and line it with non-stick baking parchment.

Pre-heat the oven to 180°C/350°F/Gas Mark 4.

Measure all the ingredients into a mixing bowl and beat for about two minutes, until well blended an electric mixer is best for this but of course you can also beat by hand with a wooden spoon.

Spoon the mixture into the prepared tin and level the surface.

Bake for about one hour, until well risen and golden brown. A fine skewer inserted in the centre of the cake should come out clean.

Leave the cake to cool in the tin for a few minutes, then loosen with a small palette knife and turn the cake out. Remove the lining paper and leave on a wire rack to cool completely. Slice thickly to serve.

With this banana bread recipe, we made it the simple and straightforward way. We left the bread as it is without adding any toppings so the decision of what to add is totally in your hands.
