Preparation: cut the meat into medium cubes, I put pork this time. I prefer to add meat because it adds flavor and this is the way I convince the family to eat this soup.

I boil the meat and carrots, onion, celery, parsnip and parsley in a pressure cooker, it cooks faster and tastes better cooked like this. So I put the vegetables and the meat, with a little delicate vegetables (or chopped dehydrated vegetables), 2 bay leaves, salt and pepper to boil and let them boil for 30 minutes since the steam started to come out. Meanwhile, I prepare the meatballs from 3-400 grams of minced meat, an egg between, 50 grams of rice, a little delicate vegetables, some finely chopped greens, salt and pepper to taste. After I homogenize them if the composition is too soft, I add a little breadcrumbs and leave them like this for 30 minutes in the fridge to let the flavors penetrate.

After 30 minutes of cooking the meat and vegetables, open the pot and strain the soup into another bowl. I put back the pieces of meat, I put a carrot on the grater, I make with the blender and I put back 2 onions, a piece of celery, parsley root, all these give an extra taste and consistency to the soup. I do the same with the blender and the peeled tomatoes and I put them in the soup which I boil again. When it boils, add the bay leaves, potatoes and finely chopped beans.

Immediately after I add the hairs modeled with wet hand in small bubbles, and put in the pot with a large spatula. Let it simmer covered and simmer for 15 minutes, during which time the meatballs and potatoes and beans are cooked. At the end of the sour taste and add chopped greens, depending on your preferences.

Meatball soup

ingredients
Ingredients meatballs :, 1 kg minced meat (pork and beef mixture), 2 eggs, 1/2 bunch chopped parsley, 50 gr rice, salt, 1 onion the right size, pepper, For the soup :, 1 carrot, 1 celery, 1 parsnip, 1 onion, 1 box of diced tomatoes, 1 medium potato, salt, green parsley, 2 tablespoons tomato paste, 1 egg, according to everyone's taste and preference: borscht, cabbage juice, vinegar, lemon juice

Difficulty: Average | Time: 1h 30 min

Ingredients Meatball soup

3 carrots (about 400 gr)
1 gulie (approx. 100 gr)
1 parsley root (about 150 gr)
1 slice of celery (about 50 gr)
1 small onion (about 50 gr)
30 ml oil
8 pork ribs (or pork bones)
1 tablespoon salt
1 tablespoon vegeta from home
1 small green pepper
2 tomatoes
1 lemon (or lemon salt or borscht)

Meatball mixture

700 gr of minced meat twice
1 medium onion
120 gr long grain rice
1 teaspoon salt
1 teaspoon pepper
1 tablespoon flour
10 threads of parsley
2 eggs

Preparation Meatball soup

  1. All the vegetables are cleaned and put on the large grater. Put them to harden in oil in a large pot.
  2. When it softens a little, put the ribs (or bones) on top and cover with water (about 3.5 l of water). Add salt and vegeta.
  3. Finely chop the peppers and tomatoes from the knife and add them to the soup. Boil everything with a lid for about 45 minutes. Check the ribs to be cooked after the 45 minutes and let them boil a little more if necessary.
    * if you use bones, the soup will be tastier, but the cooking time is longer, about 1h 30 minutes, even 2 hours and then the soup must be foamed often.
  4. While the soup is boiling, make the meatballs taking into account the following:
    - minced meat it's good to be without much fat.
    - the meat is passed through the car twice of meat, must be very fine.
    - rice which you use to be perfectly dry you can put it directly from the bag or if you are used to washing it, place it in a strainer in a warm place and let it dry perfectly. It is one of the secrets so that the meatballs do not spread in the pot.
  5. The onion is also given through the meat machine or put it on the small grater. Finely chop the parsley.
  6. In a bowl, mix all the ingredients for the meatballs and knead well.
  7. Like always wet hands, we form nuts the size of a walnut.
  8. When the ribs are boiled in the soup, we can put the meatballs, one by one in the soup, taking care to place them on the whole surface of the pot, do not crowd them in one place. Cook over medium heat for about 10 minutes. Boiled meatballs will rise to the surface. While the meatballs are boiling, froth the soup.
  9. After 10 minutes, turn off the heat, put the lid on the pot and let the soup cool. When it has cooled, straighten it with lemon juice (or lemon salt or borscht) to taste (I put all the juice from 1 lemon).
  10. Serve the meatball soup with sour cream next to it and sprinkled with chopped parsley.

4. Place the ribs over the vegetables

5. Add other vegetables to the soup

6. Cover with water and boil

7. Chop the meat twice

9. Add rice and eggs to the mixture

11. Form hairpins with wet hands

15. Serve with sour cream and parsley

Difficulty: Average | Time: 1h 30 min

Method of preparation

We clean and wash all the vegetables for the soup. Cut the potato into cubes of the right size. Carrots, celery, onions and parsnips are put on the grater with large meshes, but you can also cut them into cubes. Here it depends on the taste of each of us. In a larger pot put about 5 liters of water, vegetables, diced tomatoes and simmer until the vegetables are almost penetrated. Meanwhile prepare the meat for meatballs.

Put the minced meat in a bowl. Add the well-washed rice, cleaned onion and grate it with large mesh, eggs, finely chopped parsley, salt and pepper to taste. Homogenize the composition well and set aside for about 5 minutes. With a wet hand we form round balls, which we leave aside until the vegetables are almost cooked.

When the vegetables are almost cooked, add the meatballs. Let it boil for a few more minutes, until the meat and rice are cooked. Then add the tomato paste and the borscht that I boiled beforehand. If necessary, add more salt to taste. Turn off the heat and add the parsley on top. Optionally, meatball soup can be served with sour cream and hot peppers. Enjoy your meal!

1. Wash the bones and boil them in salted water. Collect the foam that forms and, after half an hour of cooking, remove the bones from the juice. Wash and finely chop the onion, carrot and pepper and add over the bone broth.

2. While the vegetables are boiling, prepare the meatballs as follows: boil the rice for 4-5 minutes, drain the water, mix in a bowl with the minced meat and beaten egg. Sprinkle with a pinch of salt and mix well. Put the stove on low heat and, with a teaspoon, take meat from which meatballs are made. Put them in the pot and let them boil for 20-30 minutes.

3. Separately boil the borscht, pour it into the pot, season with salt and add the soup in a few boils. Turn off the heat and add the finely chopped greens.
