First prepare the vegetables: wash the eggplant, wipe with a fresh towel then cut into slices of about 1 cm. Sprinkle salt on each slice and let it drain; the washed, wiped and cleaned pepper is cut into cubes; finely chop the onion.

Fry the eggplant slices in very little olive oil (1/2 teaspoon for each round, do not overdo it with the oil because the preparation will become too greasy).

Fry the chopped sausages in a saucepan.

In the pan in which we fried the eggplant, put 3 tablespoons of oil and fry the onions and peppers. When they have softened, add the diced tomatoes and wine. Let it boil for 10 minutes. Add salt, pepper, thyme and oregano. Put the eggplant slices in an ovenproof dish (as in the picture below), cover with the pepper and tomato mixture and then place the fried sausages.

Place the dish in the preheated oven at 180 degrees C where it is left to bake for 30-35 minutes.
